Banana Banana Chocolate Chip Muffins
Travis started his summer school today so he was up bright and early at 6am. As he was looking for breakfast he requested I buy some muffins for him for this week. Buy muffins? Is he mad? They are so easy to make and taste better than store bought! I had some almost-too-over-ripe bananas and these were the perfect fix. I have to say these are about the most banana flavored muffins I've tasted. Very moist as well. I hope he likes them in the morning!

Banana Chocolate Chip Muffins

- 1 1/2 cups all purpose flour
- 1/2 cup sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 3 large mashed ripe bananas
- 1 egg
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/4 cup milk
- 1/2 cup miniature chocolate chips
- Preheat oven to 350. Spray muffin cups with nonstick spray. Mix flour, sugar, baking powder and salt in large bowl. Mix mashed bananas, egg, melted butter, vanilla and milk in medium bowl. Stir banana mixture into dry ingredients just until blended (do not overmix). Stir in chocolate chips.
- Divide batter among prepared muffin cups, filling each about 3/4 full. Bake muffins until tops are pale golden and tester inserted into center comes out with some melted chocolate attached but no crumbs, about 17 minutes for the small muffins and 24 minutes for the large muffins. Transfer to rack; cool.
Makes 12 "regular" size muffins and 12 "mini" size muffins

Well, I'm right along with Travis. I was up at 5:15, out of the house by 5:45, and at the hospital by 6! Another great thing...I didn't get home until 6! Fun stuff. Bet these were pretty good.

These muffins look so yummy, love your recipes and crafts. I haven't had time for crafts lately and I miss that...

Claire, Yeah, but I bet you're loving being at the hospital -- even if it is long hours.
Cris, Thanks for dropping by! These muffins were good -- I think next time, though, I'll try it with 1/2 whole wheat flour to give it a little more texture.

:-) You're very right! Today I went to peds surgery and was so much more comfortable there than the regualar OR.
