PPN: Cilantro Pesto
This week has been hectic, hectic. We put an offer in on a house on Monday and by Wednesday still hadn't heard anything. In fact our Realtor told us we should probably start looking some more. Thursday comes around and they accept our offer. So, yeah!, we have a house to move to now. I'm excited about getting everything done and am now just dreading the packing and moving of all our stuff.
In the midst of all that, you know Travis has been working his butt off in summer school and that means weird scheduling for us. So, no grocery store trips this week. Which, all things considered, isn't a bad thing. I'd love to have less of a pantry to move anyway. Last night was throw together frozen stuff (a stir-fry chicken from Trader Joe's and egg rolls from Schwan's) and tonight was a pesto sauce. We didn't have basil in the house so I thought a cilantro pesto would do the trick and I was right. This was yummy, yummy. Even Don, the confirmed cilantro hater ate this and liked it.
A little late for my submission to this week's Presto Pasta Night over at Ruth's Once Upon a Feast, but better late than never, right? I just love creating new pasta dishes for this weekly event -- gets me thinking and it guarantees Liam pasta at least once a week.
Cilantro Pesto
- 1 bunch of cilantro
- 1/2 cup mixed "trail" nuts (pine nuts, slivered almonds, pumpkin seeds) - I get this at Trader Joe's
- 5 cloves garlic, coarsely chopped
- 1/2 lime, juiced
- 1/2 cup fresh Parmesan cheese, grated fine
- 1/2 cup extra virgin olive oil
Combine all ingredients into a food processor and blend until smooth. You may want to start out with 1/2 the amount of olive oil and then add more as needed to make a paste consistency. Add to freshly cooked pasta and top with more Parmesan cheese.

Good luck with the move. I just did the first half (moving out)and after 16 years of living in a house with a basement and lots of cupboards, I don't have to tell you how much stuff I had to sort through. Hope you are less of a pack rat!
