My mom went home last night and it's been a sad, quiet day around here without her. As I got up this morning I really missed not having her around to share my coffee with. Hopefully she'll feel well enough to come back to visit in December -- we'll be counting the days.
As I was flipping through this month's Everyday Food magazine last night, my eyes caught on the last recipe -- Blondies with Chocolate Chips and Walnuts. I decided to throw them together before my mom left as a "last treat" type thing for her and us. They were really, really good warm out of the oven and they're pretty good today too.
Blondies with Chocolate Chips and Walnuts

- 8 tablespoons unsalted butter, melted
- 1/2 cup packed light-brown sugar
- 1/3 cup granulated sugar
- 1 large egg
- 1 teaspoon pure vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1 cup semisweet chocolate chips
- 1 cup chopped walnuts
- Preheat oven to 350. Grease a 8-inch baking pan. Line with parchment paper if desired.
- In a large bowl, whisk butter and sugars until smooth. Whisk in egg and vanilla. Add flour and salt; mix just until moistened. Do not overmix. Fold in chocolate chips and walnuts.
- Bake until top is golden brown and a toothpick inserted in center comes out clean, 40 to 45 minutes. Set pan on a wire rack, and let cool completely.
- Store blondies in an airtight container at room temperature, up to 2 days.



These look really good. I understand how you feel when mom leaves...of course, yours goes further away than mine...but either way, it's never fun! Just something comfortable about having them there!

Thanks, Claire. They were good (though better fresh out of the oven than the next day).
It's hard for me to be so far away from my mom right now -- she's dealing with cancer and I hate that I can't just get in my car and go help her out.
