Salsa Revisited
We've really made some good headway on getting our new house in order. I'm happy to report there are no more boxes in the front of the house and I think I've finally gone through everything that actually has a home downstairs and put it away. Now there's still garage stuff and upstairs stuff to deal with but I feel like I could actually invite someone over without being totally embarrassed.
I even got a menu written and a trip to the grocery store accomplished this past weekend -- which means some recipe sharing over the coming week. (Yeah!)
Last week I made this really yummy salsa. The only problem I had with it was once it hit the refrigerator it got really dry. Tonight since we had tacos and I decided to remake it with some changes.
First, when I was broiling the peppers I added some roughly chopped onions to it and tossed it with some canola oil:
After broiling for about 10 minutes, it looked really good:
After chopping it in the food processor, it still looked dry so I added 1/2 a red tomato, the juice of one lime and a small handful of cilantro:
The result? Much better -- though still very, very spicy. Here's the listing of ingredients if you'd like to try it at home:
- 1/2 pound thin hot chile pepper, cut in half and split
- 2 cloves garlic
- 1 onion, roughly chopped
- juice of 1 lime
- 1/2 red tomato
- small handful of cilantro

Congradulations on getting setteled in nicely and making progress unpacking. Moving is quite a feat and not to be sneezed at. I break into a cold sweat just thinking about the times I've moved even though it's just been to apartment to apartment. Getting into an entire house would do me in 1000x's over.

I really, really, really don't want to move again unless I hire someone to do EVERYTHING for me. It's not a fun thing to do.
