I almost feel that the food portion of this blog has been neglected in the past month or so and really that's not the intention. Many nights we have dinners that are repeats of things I've already posted and then there are nights that I do think I'll have a blog worthy dish only to be disappointed. Such is the case twice this past week but I decided to blog about both those dishes anyway ...
The first is another Sandra Lee Crockpot recipe. Part of the problem was the roast I bought was just too fatty and didn't cook down well enough. The real problem, though, is it had some weird taste to the gravy that didn't blend well. In essence, you took your normal pot roast ingredients (carrots, celery, mushrooms, potatoes, roast) and mixed them in the Crockpot. Over that you poured a mixture of beef broth, canned gravy, and Crockpot seasoning mix (in the packet seasoning aisle). Let that cook all day and voila! a meal. Well, okay, a meal that you end up having a sandwich instead.
The second recipe I had great hopes for -- Paula Deen's baked rice pudding. It's simple enough but I think my problems with it were my own. First, I really don't like raisins. I knew should have bought golden raisins (which are milder) but ended up buying a new type that I found -- jumbo red raisins. The other problem is I added more cooked rice to it than the recipe specified. When mixing it up there seemed to be a disproportionate amount of liquid to rice and figured since the rice was already cooked it wouldn't soak up as much liquid. Wrong. Beyond the icky raisin aspect to it, it really wasn't as flavorful or creamy as I would have liked. I think I'll have to try a cooked rice pudding next time.
