Do you have a Trader Joe's in your area? Have you yet discovered the wealth of products you can purchase there? I love that I can go in there and find healthy foods at decent prices. It's also the only grocery store that if I go in looking for ideas for dinner I can usually find something.
Earlier this week I made a trip there to pick up some coffee (I just love their Volcano roast coffee!) and figured I'd get some things for dinner the rest of the week. Yesterday being Halloween we just had a "whatever" night so I didn't pick anything up for that but I knew I needed a submission to Presto Pasta Night and saw the mini mozzarella balls. Bingo! Add some chicken sausage and dinner will be done.
As known to happen in our house, things happen. Liam was sick last week with a fever and he still has a lingering cough that's deep enough it needed to be looked at. A visit to the doctor this afternoon left me little time to cook this evening so it's a good thing pasta can be such a quick cooking dish. (An aside, Liam has croup so he's medicated and on his way to health again.) Everything went together easily and even had positive reviews from the crew. My favorite part? The little pockets of melted mozzarella cheese. Yum.
Sausage and Mozzarella Pasta
No real recipe (sorry!) but put together:
- 1 pound cooked pasta (any shape)
- Chicken sausage (any flavor), sliced
- Mini Mozzarella balls (Perlini from Trader Joe's)
- Shredded basil
- Diced Tomatoes
- A little pasta cooking water
Saute the chicken sausage until brown. Add a little of the pasta water to make a sauce and then toss with the pasta. Add in the Mozzarella balls, shredded basil and diced tomatoes. Serve.
