I bet you're surprised to see a post. Mmhmm I bet you're saying "wow, I thought this blog was dead" and to be quite honest with you I was almost afraid of the same thing. Things they are a changin' and one of those changes is either quit paying for my blog or start posting again and you can see what won out. :) I can't promise I'll be around as much as I'd like -- but I can promise it won't be over a year between posts. BTW, like the new style? I think it fits my personality at the moment.
I'm going to start (again) with what I had for lunch today ...
Doesn't quite look like much, does it? I'm usually not one for fussy lunches. Give me something I can throw together (or better yet, just eat) and I'm a happy girl. I've had leftover pasta in the fridge for a few days now and this idea has been swimming around in my head for a couple weeks (I'm sad to say).
Oh, what is it? Sorry, on to the (semi) recipe. I didn't measure - just kind of threw things together but basically I had a tub of marinated artichoke hearts, a tub of piquant peppers, a tub of Kalamata olives, a tub of feta cheese, and about 1/2 cup of pasta. I heated a saute pan and added 2 spoonfuls of the artichoke hearts, 4 of the peppers, halved, 6 of the olives, halved and let them heat up a little. Added the pasta and cooked it until it was heated as well. Dumped it into the bowl and topped with the feta.
Was it as good as I expected it to be? Ummmmm... probably. I think it would have been better had I had some cilantro to throw in there to brighten the flavor a bit. Maybe a little lime juice? Avocado? (On a side note .. ever had pasta with avocado? YUM - I have come to find out that I love the taste of warm avocado with pasta - maybe we can discuss that at a later date.) Would I make it again? Yes - and it even is in the "easy" category with just one pan to clean up afterwards. Not bad, not bad at all.
