I did mention yesterday that I had some bananas to be dealt with and even mentioned baking some cookies. I printed out the recipe, went to the pantry and found out I had no Crisco (sigh). That meant back to the drawing board (okay, the web). What to make? What to make?
Hmm.. banana bread? Nah; didn't really have the time to let it bake (had to be to work at 11:00). Muffins? Yes! And the kind I chose was Banana Chocolate Chip. Now looking at the recipe, it only got 3 stars but that didn't daunt me. I read the reviews (gotta love recipes with reviews!) and followed the modifications from one of the reviewers.
How'd they come out? They were fantastic. Very moist, not too sweet, and hints of chocolate. Everyone that's had one has given their 2 thumbs up!

- 2 cups all-purpose flour
- 1/3 cup plus 3 tablespoons white sugar
- 1/4 cup Dutch process cocoa powder
- 1 tablespoon baking powder
- 1 cup mashed bananas
- 2/3 cup canola oil
- 1/2 cup milk
- 2 eggs, beaten
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts
- 1/2 cup semi-sweet chocolate chips
- In a large bowl combine the flour, sugar, cocoa powder and baking powder.
- In another bowl, blend the bananas, oil, milk, eggs and vanilla together. Add to dry ingredients, mixing just until blended. Fold in the walnuts and chocolate chips. Spoon the batter into a greased muffin pan, filling three-fourths full.
- Bake in a preheated 350 degree F for 15 to 20 minutes. Remove the muffins to a wire rack to cool completely.


Two posts in two days??!! I guess I'm not the only one getting back on the blogging train.
I have a banana muffin recipe I keep forgetting to make. Maybe this weekend I'll finally get around to it.

Oooh.. I'll have to head over to your blog today too. I'm not sure what hit me but I'm hoping to start posting again .. I miss it.
Hope you'll blog the recipe this weekend .. I can always use new banana recipes.
