Last night I was planning on making the pork tenderloin (roasted) with a side of black beans and chorizo, topped with Cotija cheese. Sounds really good, right? Well, would have been except I put the black beans in the crock pot, covered them with water, and forgot to turn them on. When I got back from my errands yesterday I did so to a cold crock pot. Heavy sigh. I immediately turned it on to high but by the time dinner rolled around those beans were not ready to be eaten so a quick look around and a Plan B had to be formed.
I found a recipe for macaroni and cheese somewhere this week, but even only remembering a few ingredients in it, I threw together probably the best macaroni and cheese we've had in a long, long time. (Silly World Wide Web, I go to search for something once and sometimes it can never be found again.) I also took the cranberry apple sauce I made for the chicken night before last and put it over sliced ham - perfect pairing! Maybe next time I'd add a little Dijon mustard to the sauce to give it a little kick, but I will be making it again.
Want the easiest macaroni and cheese ever? Boil your pasta like normal and then drain. Once it's drained, add in a jar of alfredo sauce, a cup of sour cream and a cup of ricotta cheese. Mix that together and put it in a baking dish. (At this point I wasn't too sure about it - it was very watery and didn't look very appetizing.) Sprinkle the top with dried bread crumbs and some shredded cheese - I used Parmesan and leftover cheddar from the other night when we had tacos. You don't want it too covered - but enough to melt into it. Bake at 350 degrees for about 40 minutes or until the top is starting to get a little crisp and melty. Seriously, can you get much easier than that?
