Today has been a very weird day. I haven't felt 100% so I really didn't feel like much - but we had Adrienne's winter concert at school so I didn't want to be too lazy. I have to shout out that the concert was wonderful. They really did an awesome job and I was very happy to go.
This morning, though, as I was feeling blah, I was standing in the kitchen looking around to decide what to make for breakfast, my eyes caught on the bread machine and I had a thought. I know, let's make sticky buns! So, bizarrely, I did.
The dough I made was different from my "normal" sweet dough in that I added both brown sugar (instead of white) and cinnamon. I liked the way it came out - though next time I would cook each of them separately - the centers needed a little more time in the oven (bleh, I hate raw bread dough). Once it was cooked completely, though, we all gave it 2 big thumbs up.
I think if you really wanted to go over the top, then add some icing ... but it really is fine just the way it is. I might try again next weekend in the individual portions I was talking about above - and I'll let you know if I do.
In the pan of a bread machine, add in this order:
- 1 cup of milk, warmed to about 115 - 120 degrees (I just put it in the microwave for 1 minute)
- 1 egg, beaten
- 1 package quick rise yeast
- 1/4 cup brown sugar
- 1 teaspoon cinnamon
- 3 cups all purpose flour
- 1/2 teaspoon salt
Use the dough setting on the machine and leave it until it's done. While it's doing its thing, mix together the filling:
- 1/2 stick butter
- 1/2 cup brown sugar
- 1/4 cup dried cranberries
- 1/2 cup chopped walnuts
Once the dough is done, take it out of the pan and roll it into a rectangle. Spread the filling mixture as best as you can - trying to cover most of it.
Gently roll the long side until you create a long log. I found that using dental floss is the easiest way to cut them into rolls. I got 10 out of my log but you can make them bigger or smaller if you wish.
Let them rise in a warm, draft free place for about an hour. By that time they should double their bulk.
Bake them in a 325 degree oven for 20-25 minutes or until golden brown and the centers aren't doughy anymore.
Let them cool for a few minutes before digging in. Then enjoy!
