For the past five days I've been in Texas visiting my son and his girlfriend and her family. I'd love to say it was a leisurely trip but he had surgery on Friday and while we had a good time most of it, it was stressful. He's still in quite a bit of pain, but slowly getting better. I'm not sure what I'd do without Ashley and her family - love you guys!!
I think the best part of the trip was finding out how much I love her family - and how much food can bring people together. Ashley's mom is an awesome cook and I enjoyed tasting her creations - and finding a kindred spirit when it comes to food. Unfortunately I didn't get any real photos, but here are the ones I took with my iPhone (it's an old 3g - slow, but gets the job done):
View from the plane flying in - Storms above Dallas diverted us to Houston so the plane was 3 hours late.
First thing Travis wanted after his surgery - In N Out
Pot Roast Sandwich with Hummus and Avocado
(I know, sounds weird, but it was really very tasty)
From scratch biscuits with Prickly Pear Jelly - Mmmm
Spinach, Walnut, Apple and Blue Cheese Salad with Pomegranate Vinaigrette
Braised Chicken Thighs over Brown Rice
Fried Egg over Spinach Cream Saute over a Biscuit
More burgers for Travis - this time Whataburger
Now don't forget this Friday I'm hosting Presto Pasta Night! All you need to do is send your entry to desertmemories (at) hotmail (dot) com and cc ruth (at) 4everykitchen (dot) com by Thursday March 15th. Then check back for the roundup March 16th right here!

Thursday is the 15th, isn't it?
Hope your son is feeling better. That's got to be hard, being so far away from him, no matter how old he is.

Oh DUH! Yeah, tomorrow's the 15th, sorry... I'll go fix it now. :)
Thanks, Paula .. it is incredibly hard. I'm very lucky he has someone that watches out over him as well as I do. They had to take him to the emergency room about a month ago and I was a WRECK - it's hard enough being away from him, but he's not even within driving distance.
