In looking for something to have for dinner tonight, Travis and I decided quesadillas would be a good choice (no trip to the store - yeah!). To go along with them I mixed up a quick black bean and corn salad this afternoon. I also thought this would be a perfect entry to Sweetnick's ARF/5-a-day Tuesdays - something I've been meaning to contribute to for a while now.
I really just mixed things together to taste, but first whisked together:
- 4 tablespoons of white balsamic vinegar
- 1 tablespoon canola oil
- 1/2 teaspoon each: salt, pepper, cumin and chili powder
then added:
- 1 can of black beans, drained and rinsed
- 1 1/2 cups frozen corn, rinsed to take the chill off
- 1 red bell pepper, diced
- 1/2 red onion, diced
- Handful of cilantro, chopped
It's chilling now in the refrigerator and should be ready by dinner tonight.
Sounds really yummy. I must try that.
