Do you have any of those go-to recipes that you make all the time? Well, this is one of mine. I'm not even sure where the initial recipe came from other than an idea here and an idea there. This is one of Travis' favorite things that I make and really because of the differences in heat level of each specific pepper, it's a little different every time. Sometimes (like this one) it's pretty tame and then other times it's OMG hot. Due to the lots of good for you ingredients, this is my submission to Sweetnick's ARF/5-a-day Tuesday.
We usually serve it as a dip for chips or tortillas, but it's also equally good spooned over chicken or grilled steak.
Yummy Green Salsa
- 18-20 tomatillos, husked, rinsed and cut into quarters
- 1 onion, roughly chopped
- 2 avocados, pitted and peeled
- 1-4 habanero chiles, stemmed, seeded if desired and cut in half
- 1 lime, juiced
- 1 bunch cilantro, washed and lower stems trimmed
- Salt to taste
In a food processor, combine tomatillos and onions and process until smooth. Add avocados, chiles, lime juice and cilantro and process again until smooth. Add salt to taste.
Note: I used 3 seeded habaneros this time and I really couldn't tell there were any in there. I'm not sure why since I've used 1 before with fiery results. I'd suggest you taste the habaneros first, but that could be almost like suicide for your mouth so maybe add 1 at a time and taste between additions. Also, it will get spicier the longer it sits so keep that in mind too.
