This week's going to be another crazy one. My mom comes into town tonight and we're all looking forward to her visit. (Which, btw, she was supposed to be here at 10:30pm but because of flights being delayed won't be here until 12:30am - I'm going to be exhausted tomorrow!) Tomorrow's 2 softball games plus a soccer practice, Wednesday's tennis and softball practice, Thursday's an eye doctor appointment for Liam and a soccer practice, and Friday is another softball practice. So, fair warning there won't be much food blogging done this week (which bums me out a bit). I'm going to try to get some crafting done and post that way. :-)
I have to admit that I almost posted another quinoa recipe tonight for my submission to Sweetnick's ARF/5-a-day but then decided against it. What did I choose instead? Our dinner! It couldn't be easier to get some healthy things into your diet:
First, the veggies. I cut up some carrots, broccoli, zucchini and red peppers and steamed them for about 10 minutes. Sprinkle with some of Penzey's Sandwich Sprinkle and you're done!
The potatoes take a little more effort (but not much):
For each potato, take a skewer and skewer near the bottom. Using a knife, make vertical cuts down to the skewer about 1/4" apart. Remove the skewer and repeat with the rest of the potatoes. Place a small amount of olive oil in the bottom of a casserole dish. Arrange the potatoes cut side up and then drizzle with a little more olive oil. Sprinkle with sea salt and freshly ground pepper. Bake in the oven at 375 for approximately an hour.
What's that red substance in the back? BBQ Chicken?
