Doesn't this look delicious? I made this for Don, Travis and I last night. Don was surprised to find it was actually pretty good for us too! The strawberries are full of antioxidants and vitamins (hence, I'm submitting this dish to Sweetnick's ARF/5-a-Day Tuesday - can't wait to see what everyone else has come up with!), the filling is actually fat-free, sugar-free cheesecake pudding and the whipped cream is Cool Whip light. Okay, the layers are puff pastry, but I did good with the rest of it, don't you think?
Easy Strawberry Napoleons
- 1/2 box frozen puff pastry dough cut into 9 squares and baked according to package directions
- 1 package sugar-free, fat-free cheesecake flavor pudding mix
- 2 cups skim milk
- 1/2 container Cool Whip light, thawed
- 2 cups strawberries, hulled and sliced
Make the pudding mix with the skim milk. I always put it all into my blender and process for 2 minutes. Let set up in the refrigerator for at least a half hour.
When it comes to serving, split the baked puff pastry into 3 layers. Starting with bottom layer, add a spoonful of pudding, a spoonful of strawberries, another layer of puff pastry, more pudding, more strawberries, the top of the puff pastry and top with a dollop of Cool Whip.
That looks Yummy and Light. I've never tried working with puff pastry but that makes me want to give it a go.

Looks good! I LOVE strawberries. I think that I could enjoy this dessert. Why just you, the husband, and Travis? No Liam or Adrienne?

Claire ... Adrienne and Liam don't like strawberries and Liam is lactose intolerant so he doesn't do milk products real well.
(Yes, I've got some weird eaters in this house)
