Yesterday I decided enough was enough and it's time to get back to some good cooking. I knew I was a little late to participate in last week's Presto Pasta Night at Ruth's Once Upon a Feast so I figure I would post what I made for dinner last night today knowing that I'll be sure to join in for this week.
Ruth had requested some pasta dishes that don't have cheese (or dairy) in them and I thought this recipe for sesame noodles fit the bill perfectly. I made some grilled chicken wings with Iron Chef glaze to serve with them but I opted to eat them with some spring rolls. When I went over the ingredients for the recipe I realized that I didn't have any tahini and needed to run to Whole Foods to pick some up. I love Whole Foods ready made food section and the shrimp spring rolls just called to me. Good choice!
I happened to use some natural peanut butter and it clumped a little once these were chilled but it didn't affect the taste any. Hope everyone has a fabulous weekend!
Cold Sesame Noodles
(modified from this recipe)
- 9 ounces soba noodles
- 1/4 cup crunchy peanut butter
- 1/4 cup tahini
- 2 tablespoons soy sauce
- 1 1/2 tablespoon sesame oil
- 2 teaspoons Sriracha sauce
- 1 tablespoon rice vinegar
- 2 teaspoon grated ginger
- Cook the noodles as directed on package. Drain and rinse with cold water.
- Combine the rest of the ingredients until smooth and toss with the cool noodles.
- Garnish as desired with green onions, cilantro and cucumber.

I love this dish dearly and could eat it year round! I'm so glad for personal food blogs because the commercial recipe out there never taste right.
Extra kudos to you for using sriracha sauce, it makes all the difference!
