Tonight's Presto Pasta Night entry (for Ruth's weekly event over at Once Upon a Feast) is a recipe I made for our big family dinner in December. When deciding what dish to make for this week, I knew I had to make it again and showcase it on its own.
Have you ever had kugel before? Basically, it's a noodle "pudding" that can be either sweet or savory. While I've only ever made (or even eaten) a sweet one, I suppose the savory ones would be good as well. My mom makes an awesome kugel but it's really, really heavy. LOTS of sugar, sour cream, butter, eggs, cream cheese, etc. and at our holiday dinner in December I wanted something a little bit lighter and came across this version at All Recipes. It was a great change of pace - though I will still make my mom's version at times as well.
How was it received? 4s all around so it's something we'll definitely have again. If you've never eaten a sweet kugel, give it a try!
Applesauce Noodle Kugel

- 1 (16 ounce) package wide egg noodles
- 1 cup reduced fat margarine
- 1/2 cup fat free sour cream (I used regular)
- 1 1/2 cups egg substitute (I used 3 eggs)
- 2 cups white sugar (I used 1 1/2 cups and it was still really sweet)
- 1 teaspoon lemon juice (omitted)
- 1 teaspoon vanilla extract
- 1/2 (16 ounce) jar applesauce
- 1/4 cup raisins
- 1/4 cup graham cracker crumbs (optional)
- 1 teaspoon ground cinnamon, or to taste
- Preheat oven to 350 degrees F (175 degrees C). Coat a 9x13 inch baking dish with cooking spray. Bring a large pot of lightly salted water to a boil. Cook noodles in boiling water for 8 to 10 minutes, or until al dente. Drain.
- In a large bowl, mix together margarine, sour cream, egg substitute, sugar, lemon juice, vanilla extract, and applesauce. Stir in noodles and raisins.
- Spread graham cracker crumbs on the bottom of the prepared dish. Pour the noodle mixture over the crumbs. Sprinkle top with cinnamon.
- Bake 45 to 60 minutes in the preheated oven, or until set. Cover with foil if it browns too quickly.
It does sound yummy. I must say, I should be making more of the "holiday" dishes more often.
