I wasn't sure I would get a post in today. Liam is slowly getting worse (why is that?!?) so I'm sure he'll be home again tomorrow. We spent the day alternating between watching movies, playing on the computer and playing board games. I'm hoping he'll wake up good as new tomorrow but I'm pretty sure that won't happen. At least it's Friday and he'll have the weekend after that to recuperate too.
We had the leftover turkey and stuffing from last night in the 'fridge so I knew I had to do something with that. I didn't feel like just plain turkey and stuffing and because I hadn't yet made a submission to this week's Presto Pasta Night at Ruth's Once Upon a Feast, turkey and pasta it became. First, let me preface this in saying the turkey came out awesome. I will definitely make turkey in the crockpot again. It was easy to do and my leftovers today were moist and tasty.
This recipe is a little unusual -- you start with a bed of pasta and add a tomato based sauce and then a creamy turkey sauce. Don and I really enjoyed it but the kids not so much. I'll post the recipe with my changes below, but to let you know how the original recipe went, it was with uncooked chicken cooked in butter and heavy cream and the tomatoes weren't the fire-roasted type.
Pasta with Turkey Sauce
(modified from Greatest Ever Pasta by Parragon Books)
- 1 pound spaghetti
- Tomato Sauce
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 garlic clove, diced
- 14 ounce can fire-roasted chopped tomatoes
- 2 teaspoons dries oregano
- 2 bay leaves
- 2 tablespoons tomato paste
- 1 teaspoon sugar
- Turkey Sauce
- 1 cup half and half
- 1 cup diced cooked turkey
- 2 tablespoons almonds, sliced
- 1 teaspoon Italian seasoning
- To make the tomato sauce, heat the oil in a pan over medium heat. Add the onion and garlic and cook until the onion is translucent. Stir in the tomatoes, oregano, bay leaves, tomato paste and sugar. Bring to a boil and simmer, uncovered for 15020 minutes.
- To make the turkey sauce, bring the half and half to a simmer in a small saucepan. Add turkey, almonds and Italian seasoning and keep at just under a simmer.
- Bring a large pot of water to a boil. Add the pasta and cook according to package directions. Spoon the tomato sauce over the pasta and arrange the chicken sauce down the center.
Frankly, I like your version better than the original! Thanks for sharing with Presto Pasta Nights and I do hope Liam gets better soon!
